Building Beds, Building Hope: A Day with Sleep in Heavenly Peace in Bend

Sleep in Heavenly Peace is a nonprofit organization that began in 2012 in Twin Falls, Idaho, when founder Luke Mickelson built a bunk bed for a family in need using leftover wood from a home improvement project. He quickly realized the demand for beds was far greater than he imagined. From that humble beginning, SHP has grown into a nationwide movement with over 300 chapters across the U.S. and Canada. Their mission is simple and powerful: “No kid sleeps on the floor in our town.” To date, they’ve delivered more than 273,000 beds to children who previously had none.

The Attack of the Killer Breakfast Burritos!

If you are a fan of breakfast burritos as I am and have a few favorites already, by all means, share them with me and I will be happy to feature there at some point. But to kick things off, we have to start with the place that has quickly made a name for itself as the Boss of the Sauce, serving nothing but breakfast burritos: a bright yellow food truck on NW Greenwood called Burrito Sunrise.

Sunrise is stunning over the tulip fields as the sun rises near distant Mt. Hood. Some days, there’s fog on the fields, other days a red glow in the sky. The fields open for photographers at 5:00 am when it’s still dark, so you can set up your tripod before the sun breaks. You’ll have to leave Central Oregon by 2:30 am to arrive by 5:00, or stay over in nearby Woodburn.

The shutdown of 2020 gave people time to rethink their career choices. They evaluated their skill set and took it to another sector of the workforce. The government then subsidized most peoples’ income to where some, especially those of us in the Food and Beverage (F&B) industry were making more money on unemployment than on payroll and said enough of this. Some were just scared off because the pandemic made them feel unsafe in the socialness of the F&B world.

Tumalo Mountain

Anticipation builds as we draw nearer to the summit. This is always the portion of the hike that seems to take the longest. We can see the top, but all of the sudden it’s unclear where the trail is. Fortunately for us, it’s pretty difficult to get lost on this tiny mountain, so we continue to blaze our own trail upward.
