A Taste of Tradition: Dining at Wild Catch in Central Oregon

Tucked beside Wild Ride Brew, Wild Catch is a food truck built on family heritage and high-quality seafood. From hand-breaded shrimp to perfectly fried cod, this is a stop that proves great flavor can thrive anywhere, even in the high desert.

If you are visiting Prineville or Redmond, a stop at Wild Ride Brew gives you more than great local beer. Parked right on site is Wild Catch, a food truck bringing elevated seafood to the high desert in a way that feels both unexpected and totally at home.

I stopped by their Redmond location to check out the menu. Every recipe has roots in family tradition, and the focus on quality ingredients shows up in each bite. They are making a pretty strong argument for serving the best fish and chips in the region.

Here is what the experience looked like.

The Starter: Stinging Honey Garlic Shrimp

I opened with the Stinging Honey Garlic Shrimp, and this dish sets a tone immediately. The shrimp are plump and hand breaded, so they have real substance. The sauce steals the show with a balance of sweetness, tangy garlic, and gentle heat. Even with the glaze, the breading keeps its crunch, which makes the texture stand out. It is an elevated take on a familiar starter and a great way to begin the meal.

The Main Course: Wild Cod Fish and Chips

For the main, I went with the three piece cod. Wild Catch uses wild caught fish and a hand breading process that has clearly been refined over time.

The batter is light and crisp, and the fish inside stays hot and flaky. It shines with a splash of malt vinegar, a squeeze of lemon, and their house tartar sauce. The fish is cooked with precision and avoids the heaviness you sometimes get with fried seafood. It is simple, classic, and incredibly well executed.

A Note on Heritage

The quality at Wild Catch comes from more than technique. These recipes are family heirlooms passed down through generations. The owner’s father was a fisherman, and that connection to the source is noticeable in the way the food is prepared. Everything from the breading to the coleslaw feels intentional, like a craft preserved over time.

The Accompaniments

A good seafood basket needs something to cut through the richness, and the coleslaw here does exactly that. It has a peppery note that brightens each bite and brings balance to the plate.

I paired the meal with a Coles Light from Wild Ride Brew. Its crisp, clean profile fit perfectly with the savory flavors of the basket.

Whether you are at their Prineville or Redmond location, Wild Catch offers a dining experience rooted in story and tradition. When family recipes are treated with care, they create something memorable, and this meal is a great example of that.
